Old thread I know, but I've read LOTR quite recently and I feel like replying. I'm quite fond of these lines:
One ring to rule them all one ring to find them One ring to bring them all and in the darkness bind them
And I absolutely LOVE the poem about Aragorn (not all that is gold glitters...)

"lament for eorl the young" was one of my favourites too, which brought me some praises after i managed to translate it into my native language, in a poetic way loyal to Tolkien's; his "aura". but it was inspired by an old english poem, so tolkien can't get the whole credit (:
recently, my favourite is song of beren and luthien, and it is perfectly composed by the tolkien ensemble:

My favorite LOTR poem has to be the Bilbo's song. I love it so much specially because I can relate to it. Here it goes:
I sit beside the fire and think
of all that I have seen,
of meadow-flowers and butterflies
in summers that have been;
Of yellow leaves and gossamer
in autumns that there were,
with morning mist and silver sun
and wind upon my hair.
I sit beside the fire and think
of how the world will be
when winter comes without a spring
that I shall ever see.
For still there are so many things
that I have never seen:
in every wood and every spring
there is adifferent green.
I sit beside the fire and think
of people long ago,
and people who will see a world
that I shall never know.
But all the while I sit and think
of times there were before,
I listen for returning feet
and voices at the door.
